We start with our Gold Medal and Best in Class Single Spanish Varietal 100% Arbequina with a healthful polyphenol count of 492 and infuse it with lemon extract oil.  Because the California Olive Oil Council does not certify any flavored oils as they are no longer 100% olive oil, it could not be entered into the COOC competition. It like all our other oils, however, comes exclusively from our estate grown olives in Creston, California, lovingly hand harvested and cold pressed within hours of coming off our trees. Great jump start for salad dressings or drizzled over vegetables and our favorite, sweet potatoes.  And of course, super with seafoods or anything else where a citrus twist is desired.
