Awarded Bronze and certified by the COOC as the highest quality Extra Virgin Olive Oil. This is a lovely blend of our Estate Grown olives:  49.9% Arbequina, with 49.9% Mission and a .2% kiss of our French Picholine.  It has a buttery and grassy front note from its Arbequina contributor as well as an almond and herbaceous note from its Mission and Picholine contributors, followed by a classic EVOO bite and pepper finish.  Even though this EVOO has a "very high" polyphenol count of 651, the melding of these complex notes give this EVOO a rounder and softer feel, making  this EVOO very versatile.  If the recipe calls for one tablespoon butter, use 3/4 tablespoon of this EVOO.
